Cheese-y Macaroni with Bacon (NF)
Friday night and we want something comforting and warm for dinner... a quick look through the cupboards and we pull out macaroni, bacon, peas, corn and cheese - YUM Mac n Cheese! I haven't had macaroni cheese for years!
GFScallywag Macaroni Cheese with Bacon
1packet GF Macaroni (we used San Remo)
3rashers bacon, chopped and fried
2/3 cup frozen peas
2/3 cup frozen corn
White Sauce
500ml milk
1 1/5 tblspn butter
2tblspn cornflour
1 1/2 cup grated cheese (we used tasty, vintage cheddar and parmesan)
pepper to taste
In a small pot melt the butter and add cornflour mix to form a thick paste. Remove from heat and slowly add the milk in batches, slowly mixing to thin the paste, whisk to remove lumps. Continue stirring over heat until sauce thickens, add the cheese and pepper and stir until the cheese melts and the sauce is thick. Do a bit of a taste test here to see if you need more pepper, cheese or if you wish you can add a teaspoon of mustard for extra flavour. I don't add salt as there is enough in the bacon.
Cook the macaroni and drain, return to pot and add bacon, peas, corn and cheese sauce. Heat in the pot and serve or put into small oven proof dishes top with cheese and GF bread crumbs and back for 10-15minutes till hot. Serve.
Yum - now you can obviously omit the back and add tuna, chicken or nothing at all maybe just broccoli to add some healthy and nutritious greens to this dish,as I'm sure it isn't too nutritious; but yummy it is!
