Berry Tarts

..... and then because my current other half doesn't like coffee I just HAD to bake something he'd love didn't I?

GF Scallywag Berry Tarts for Him

75g butter, softened

dash vanilla

75g icing sugar, sifted

3/4 cup almond meal

1 tablespoon GF cornflour

1 egg

berries to sprinkle

icing sugar to dust

Preheat oven to 180degC. Grease 3 small loose-based flan dishes.

Beat the vanilla, butter and sugar together until light and fluffy. Add egg and beat until combined. Mix in the cornflour and almond meal.

Spread misture evenly amoungst the three pans and smooth. Scatter berries on top. Bake for 25minutes. Remove from oven and allow to set for about 15minutes before removing from pans and cooling on wire rack.

Serve dusted with icing sugar at room temperature with a dollop of cream or ice cream.
