Apple & Potato Gratin (EF, NF + V)

Me: so, do you like it?

Him: mm... yes.

Me: so, what do you think is in it?

Him: potatoes?

Me: yeah...and?

Him: erm..... I'm not sure something... almost sweet?

Me: yes, but what is it - keeping in mind, hun, that I used ingredients we had laying about the house...

Him: no idea.

Me: apples!

Him: mmm... we do have lots of those. It's good, is there any more?

Me: maybe...

Apple & Potato Gratin

Serves two or three

1 apple

4 medium potatoes

100ml cream

50ml milk

1/2 spring onion, washed and finely sliced

1/2cup grated cheese

butter

salt + pepper, to taste

Heat oven to 180degrees and grease a loaf tinwith oil or butter.

Wash the apple and potatoes. (I peeled my potatoes as they were quite dirty, but their skin contains the best nutrients to its better to keep it on!) and slice thinly with a knife or mandolin.

Place 1/3 of the potato into the loaf pan. Season with salt and pepper. Layer half the apple and spring onion on top. Continue with second third of potato. Season and layer the remaining apple and spring onion on top. Sprinkle the grated cheese on top. Layer the final third of potato on top and season with salt and pepper.

Whisk together the cream and milk and pour over the top. Cover with alfoil and bake for approximately 45minutes. Remove from the alfoil. Dob a little butter on top and bake for another 15minutes or until cooked through.

Cool slightly, cut and serve.
