Have you been to the Camberwell Sunday Markets? Do you like sorting through trash to find treasure or love collecting vintage nick-knacks? Yes? Well, don't go to the Camberwell Sunday Markets then, you'll get addicted! Ha! One of the ladies I met at a workshop that I did with Dario earlier in the year is addicted (like me), sometimes we'll text each other our finds and sometimes we'll go shopping together; make a day of it. You know, talk each other in and out of purchases, carry ridiculously heavy bags when the others fingers are purple and about to fall off- it's just what friends do - take everything home and re examine it all over a coffee and then pour over the cookbook collection to get in the kitchen again! It's a vicious, vicious cycle and one that my gorgeous fiance finds hilarious, so long as everything I buy fits in my tiny prop cupboard (which isn't much!) but somehow I always manage to find something else and it always fits...

This market is one of my favourite things about Melbourne . That and the awesome industrial/vintage coffee shops, Chapel St Bazaar (like Camberwell Markets but open all week - it's a dangerous spot!), walking round the tan on sunny mornings, turning corners to find hidden bars with friends and drinking too much good wine when out to dinner!

One of the other things I've thoroughly enjoyed here in Melbourne are the expos and shows and I can't wait to help out Three Ducks Gourmet with their stall on the 15th September! I'm helping out Three Ducks with the powerwoman behind One Girl Pie who makes amazing gluten free pies that are stocked at Three Ducks and eaten by me on the odd occasion I want a wee bit o' blueberry pie! Meanwhile onto this delicious caramel walnut slice

... it's moist, coconutty, crunchy and did I say delicious? Perfect for a morning tea at work, picnic in the park or lash out and have a slice for morning AND afternoon tea and whilst you're at it add a dollop of whipped cream. Then hit the gym and go double time on that treadmill.

Caramel Walnut Slice

Adapted from AWW. Makes about 12 squares.

Base

160g (1 cup) plain gluten free flour

125g butter, melted

95g (1 cup) desiccated coconut

70g (1/3 cup) castor sugar

1/2tsp gluten free baking powder

 Heat oven to 170degrees celcius. Line a brownie tray (28 x 18 cm) with baking paper.

Combine all ingredients and press into the prepared lamington tray. Bake 15minutes. Meanwhile prepare the topping.

Topping

2 eggs

1tsp vanilla essence

150 (3/4 cup) brown sugar

95g (1 cup) desiccated coconut

60g (1/2 cup) walnuts, chopped

Whisk together the eggs, essence and sugar until the sugar is dissolved. Add in remaining ingredients and mix together. Pour over the baked base and bake fore 20minutes.

Cool in tray. Slice and serve. Will keep for approximately 3-5days in an airtight container.
