Chocolate Cupcakes
When the whole gang gets together at my man's house it's a little bit different my family affair.
I only have one brother and mind you he's enough mischief for an entire family, don't get me wrong I love him to pieces and wouldn't pass him up for any number of brothers and sisters, well, I haven't had the inclination to trade him in since I was about 17. Whereas, my man has one brother, two sisters and three nieces and nephews so it's a bit of a louder, rowdier affair.
Everyone is now used to my bringing baked goods over, whether its cupcakes for someones birthdays or gluten free focaccia for Christmas. So, when I offered to make dessert I thought I'd do something a little different...
Ice Your Own Cupcakes

Gluten Free Scallywag Chocolate Cupcakes
120g butter
75g milk chocolate
75g dark chocolate
1 cup almond meal
2/3 cup GF self raising flour
1/3 cup nutella
1/3 cup castor sugar
3 eggs
In a small pot melt the butter and chocolate together. Allow to cool.
In a large bowl mix all ingredients together.
Put patty pans in a 12 hole muffin pan and scoop mixture into pans to about 3/4full. Bake in a 160Deg ven for 20minutes or until skewer comes out clean. Turn out to rack and cool.
Vanilla Buttercream Frosting
130g butter, softened
1 1/2 tsp vanilla essence
1 1/2 cups GF icing sugar, sifted
2-3tblspn milk
With the whisk attachment beat the butter until light and fluffy (takes about 5 minutes), add icing sugar, vanilla and some of the milk. Beat until light and fluffy (this will take 5-10minutes, the longer you beat it the fluffier it'll be) add more milk until you've reached the desired consistency.
Spoon into a piping bag with desired attachment.
You'll also need your toppings of choice we used:
skittles,
red frogs,
chocolate buttons,
chocolate honeycomb,
100's & 1000's,
musk sticks
Make sure to check items depending on dietary needs, seen as I'm the only Coeliac we used lots of gluten-ous toppings and I simply ate the Gluten Free ones.
Put all the different toppings in bowls and the cupcakes on the table. Then let everyone loose! Now, you might want just one topping or maybe two or maybe every single topping so make sure there's plenty of each.
I must say I'm not sure who had more fun, that adult or the kids...
